Zucchini Pasta

Ingredients

  • 2 tbsp avocado oil
  • 4 cloves garlic sliced
  • 6 whole zucchini julienned
  • 1/2 tsp salt Pink Himalayan sea salt
  • 1/2 tsp pepper freshly ground
  • pinch red pepper flakes

Instructions

  • 1. Cook garlic in oil until aromatic on medium heat. 
    2. Add julienned zucchini, tossing until cooked through. (Do not julienne the seedy middle.)
    3. Season and serve as-is or with your favorite pasta sauce. 

Notes

I love quick, inexpensive, nutritious meals like this one. Even my kids think zucchini is tastier than pasta, and it is so much better for them. Zucchini is an excellent source of manganese, which our body uses to protect our cells from free-radical damage, keep our bones strong, keep our blood sugar levels normal, and support our thyroid glands.
